Lemon Avocado Vinaigrette

  • ⅓ cup olive oil
  • Juice of 1 lemon
  • ¼ cup white wine vinegar
  • 1 dipper full raw honey - about 2 Tablespoons
  • dash sea salt
  • ¼ cup diced onion
  • 2 cloves garlic
  • 1 large avocado, pit removed and flesh scooped out
  • ¼ cup bacon grease, with some bits of bacon (secret ingredient!) -leave out for vegetarian option, which is still amazing.

Put everything but the bacon grease in a food processor and blend until smooth. Slowly pour the bacon grease and bacon bits into the food processor, while running, until incorporated. Pour the results into a mason jar. Makes about 3 cups. Store in the refrigerator for two to three weeks, if it lasts that long.

Herbed Fish

grilled-fish-citrus-herb-recipe.jpg
Herbed Fish
This simple fare couldn’t be easier. Put it in the oven after a long day out, and enjoy it with minimal clean up. Advance assembly of the fish package makes it even easier, as would advance cooking of the rice. Bonus: It’s inexpensive and healthy as the dickens. Five pounds of whiting is at Sam’s Club for less than $12. Let me know if you want some.
Ingredients per person
  • Dry Rice, about ½ cup
  • Vegetable or chicken broth or water, 1 cup
  • 3-4 filets fish, fresh or thawed
  • Fresh or ground herbs
  • Olive oil or melted butter
  • Thinly sliced vegetables, such as zucchini or tomato
  • Parsley and lemon to garnish, if desired
  • Salt and pepper to taste
Equipment
  • Parchment paper
  • Rice Steamer
Directions
  1. Preheat the oven to 350 degrees.
  2. Put rice and broth in steamer and begin cooking.
  3. Place fillets of whiting, cod, or any other basic fish on a piece of parchment paper.
  4. Drizzle with olive oil or melted butter.
  5. Dust with fresh or ground herbs, salt and pepper. Dill, rosemary or thyme are particularly delicious.
  6. Top with  thinly sliced vegetables.
  7. Gather corners of parchment paper and twist to close.
  8. Bake at 350 degrees for 15 minutes. Open paper and serve with rice.
Note: To make this dish Whole30 (Paleo, primal, etc.), substitute broccoli or cauliflower for the rice. Enjoy!

Winter table talk

Winter is the perfect time to try out some new paleo recipes. First, paleo makes use of all those delicious and nutritious root vegetables that we usually glance at and reach past while we grab the stand-by favorite white spud. Get to roasting with rutabagas and parsnips - your body will love you for it.

And speaking of your body, you'll look great during the festive season for adding in a bit of paleo, which helps you lose body fat. Eat this way all week and then indulge without guilt at the parties of the season.

And the season is the best reason of all: paleo recipes are chock full of the stuff that is seasonally available. Perfect for pairing with the freezer meats, so you can save your money for champagne! And so much of what is made this way can be set up in the crock pot to be warm and welcoming as you walk in the door, perfect for chasing the chill away.
