Pound Cake

Pound Cake
This classic recipe is so simple a kid can do it. The original calls for a pound of each: eggs, sugar, flour and butter and makes two loaves. This recipe is half that, for simplicity, but if you want to make the full batch, simply double it and bake two loaves at once -- one to keep and one to give away.

Ingredients
  • 5-6 eggs
  • 1 ⅔ cups organic raw sugar
  • 2 c. all purpose flour
  • 1 cup (2 sticks) butter, softened
  • 1 lemon
  • 1 Tablespoon Madagascar vanilla extract
  • ½ teaspoon sea salt

Equipment
  • Loaf Pan, thoroughly coated with butter
  • Mixing bowl
  • Wire Whisk
  • Wooden Spoon

Directions
  1. Preheat oven to 350 degrees.
  2. In the mixing bowl, cream the softened butter until fluffy. Add sugar and mix well until smooth.
  3. Add eggs, one at a time, mixing to incorporate each before adding the next.
  4. Add the vanilla and the juice of half the lemon. Zest half the lemon into the batter.
  5. Mix the salt into the flour and then add to the batter, stirring just enough to incorporate.
  6. Pour batter into loaf pan.
  7. Bake at 350 degrees for 90 minutes, until a toothpick comes out clean.
