The Food Processor Conundrum

Lately I've been reading a lot of recipes and nutritional information. It is really all NerdFitness' fault, but that's not important right now. What is important, and friends, it is very important, is that I want to make homemade coconut butter. I have to, you see. It's a basic ingredient in about a million totally yummy recipes, not the least of which are some stuffed apples that cook in the crock pot and should be served up at work. Seriously. We deserve these. [Of course, coming back to work after the holidays, we might need to make a Sugar Detox Pact, but even if we do, these beauties are still approved.]

I have everything I need. Even the coconut flakes. But, dear readers, I need a food processor. Seriously, these are words I never thought I would have to utter, but here we are. The coconut flakes need to blend for eight to ten minutes, so I don't really see any way around the appliance factor. Does anyone have a food processor they would willingly lend me so I can make this?

Ok, maybe I just need to accept that the time has come for me to buy a food processor. Because, you know, in addition to making the coconut butter, it's used in lots of things, like Magic Brownie Bars, Coconut Klondike Bites (these beauties only take five minutes to make, and pop into the freezer!), Fourth of July Lemon Fruit Tart, and Caramel Apple Pancakes. All of which are paleo, which isn't necessary, but isn't exactly bad, either. Did I mention that the Coconut Klondike Bites only take 5 minutes to make and 25 minutes to freeze? Crazy.
